Gyokuro is one of the top teas in Japan. In a special production, the tea bushes are shaded with special nets for up to 20 days at the beginning of May. Due to the limited exposure to light, the leaves generate more chlorophyll thus contain less tannin. The tea then develops a sweeter and a more mellow taste. Gyokuro is only harvested once a year, because the shading weakens the plants and need time to recuperate after the first harvest. The finished tea has flat dark green needles and a subtle sweet "umami" taste.
